MMS!!!!! You spend $500 on a phone the phone is amazing but it can't do something that cheap $20 phones can do send PICTURES!! It's the biggest downfall the iPhone has it's really not that hard they made it so you can email pictures why can't we text them or receive them??
An Instant Messaging client.... and make one that sits at the same level as the Blackberry Messenger..... were you can send not only text but also pictures, videos, voice recording and even files.....Of course make it a background running always on application. Integration with other IM services would be a killer, Live Messenger, Yahoo, AOL IM.....
Allow categories in Contacts, so I can keep my private and business contacts separate; I want to be able to sync business contacts with a computer at work and personal contacts with a home computer and not 'infect' each with the other's data. Do the same for Notes and Calendar too and you'll be half way there!

Flash. Transparent Dock. Cancel an alarm without having to swipe. Have my Wallpaper dimmed as a background on Springboard.
Please fix the Bluetooth Personal Addressbook - it doesn't work on my (new) car. I get dialed calls, but not the addressbook itself, missed calls or received calls. Reading various blogs says this is goofed up all over the spectrum of different iPhone releases and car kits. Other phone get it right....
I know Apple has that love/hate relationship with Microsoft and all, but please Hotmail one of the most popular e-mail services out there. Can we please have Hotmail supported in the Mail App? (bonus for Windows Live Calendar/ Windows Live Contacts synching (different from Windows Contacts)
Allow me to schedule a call to the contact im looking at while in contact view (one extra button ?) .. Allow me to pickup and insert a contact entry while scheduling an appointment in calendar .... with this who needs CRM !! Maybe allow 2 or 3 custom searchable fields in contacts
Complex vibration. Ability to set "morse code"-like vibrations to Contacts, in such a way that the user can determine who's calling without having to interact with the phone. E.g. 3 long = my main squeeze. Setting for "all calls" or "only when silent."
I need to send Contacts via SMS. This is a very simple button in the contacts that will stop the embarrasment of dictating numbers to friends and colleagues (yes, all iPhone 3G and cannot do this!). All Cheap mobiles have that! Come on Apple! it is not that difficult....
Allow me to see my "Recent Calls List" while in a call! Nothing is more frustrating than saying "let me give you the number of the person I was just speaking with. Oh wait, I can't view it while we're on the phone. Let's disconnect, then I'll save it as a new contact and I'll call you right back with the number!" LAME!
Allow the Iphone to sync with Windows live mail including calendars or give me direct access to sync with google calendar so I can sync with it from live mail and then ave the iphone pick the changes via network
"Recent calls" show the name of the person who just called, if they are a known caller or a "favorite" but which number did they call from? If there are three phone numbers listed in the contact info for that person, which number did they just call you from? Which number do you call then back on?
Hold down on elements in the standard applications to have a menu slide up/down. (Like holding the center button on the new Nano slides down that menu.) Hold down on phone number or email address within Mail for "Add to contact" and "Create new contact". Hold down on a Name in the Contacts application for "Add to group".
Sorting contacts by company name, come on apple, you are wanting to break into enterprise side of the business. Most sales people sort their contacts by company name, not by person. Help a sales guy out
